Asian Pea Salad
- 3 green onions, finely chopped
- 4 oz. sliced water chestnuts, drained
- 1/2 cup chopped roasted cashews
- 1/2 cup reduced fat sour cream
- 1/2 tablespoon minced fresh ginger
- 1 teaspoon light brown sugar
In a large mixing bowl, combine peas, scallions, water chestnuts, and cashews. In a small bowl, whisk together the sour cream, ginger, soy sauce, sesame oil, brown sugar, and cilantro. Pour dressing over the pea salad and stir well. Cover and refrigerate until time to serve.
