Canadian Maximum Power Meatloaf

  • 1 cup canned lentils, drained and rinsed
  • 3/4 lbs extra lean ground beef
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell red peppers
  • 1 tbsp minced garlic
  • 1 package frozen spinach, thawed and drained
  • 3 tbsp light soya sauce
  • 1 egg white, beaten until foamy
  • 1/4 tsp black pepper

Preheat the oven to 350 degrees F (180 degrees C). In a large bowl, combine all ingredients and mix well. Spread the meat loaf in a nonstick loaf pan. Bake until meat is well done about 1 hour or microwave. Remove from the oven and let stand about 2 to 5 minutes. Cut into slices and serve with mashed potatoes.
