Black Bean Salad

This salad is great by itself or as side dish.

Servings—4

  • 2 cans (15 oz.) black beans, rinsed and drained
  • 1/2 red pepper, chopped fine
  • 1/2 yellow and green pepper chopped fine
  • 1 lime juiced
  • 1/2 red onion, finely chopped
  • 2 Tablespoon cilantro leaves finely chopped
  • 2 Tablespoon fresh parsely leaves finely chopped
  • 1 1/2 tsp olive oil
  • 2 Tablespoon white vinegar
  • 4 Tablespoon water
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon tumeric
  • 1/2 teaspoon oregano
  • 1 teaspoon Tabasco or other hot chili sauce
  • salt and pepper to taste

Mix together all ingredients in a large bowl. Cover and chill for 2 hours.
