Black Bean Salad
This salad is great by itself or as side dish.
Servings—4
- 2 cans (15 oz.) black beans, rinsed and drained
- 1/2 red pepper, chopped fine
- 1/2 yellow and green pepper chopped fine
- 1/2 red onion, finely chopped
- 2 Tablespoon cilantro leaves finely chopped
- 2 Tablespoon fresh parsely leaves finely chopped
- 2 Tablespoon white vinegar
- 1/4 teaspoon garlic powder
- 1 teaspoon Tabasco or other hot chili sauce
Mix together all ingredients in a large bowl. Cover and chill for 2 hours.
